My Story:

My name is Bethany and welcome to my little corner of the internet! I'm 26 years old and living with multiple severe food allergies and gluten intolerance. My  journey towards health and vitality began in the frosty months of 2009 when I was finally diagnosed with major gluten issues. I quickly realized that the mental and physical ailments that had plagued most of my childhood were directly correlated with my consumption of gluten (wheat, barley, rye). I was advised by a physician at a very young age that I would grow out of my problem with wheat, but now I know that wasn't entirely true. After starting a gluten-free diet in 2009, all of my debilitating symptoms dissolved into thin air within a brief two weeks time.

Two and a half years passed with increasing vitality and strength until my body began a second crisis. I slowly began to develop a life threatening allergic reaction (anaphylaxis) to soy, peanuts, and some things in the legume botanical family (most beans, all peas, lentils, etc). I once again healed my body from long term food allergy damage and am now happily living a simple, healthful, and delicious life.  I removed most processed food, processed sugar, and all soy, peanuts, legumes and most dairy from my diet and have never felt so vibrant. Thus, my passion for sharing my life, lessons, and journey on this unique path blossomed.

I embarked on the rewarding experience of dedicating a website to living simply and fully while on a lifelong restricted diet. Soy and gluten especially are hidden everywhere in our modern food system in the U.S. and if you're particularly sensitive, everyday life seem a little scary and has obvious challenges. But it doesn't have to feel that way. Here, I strive to emphasize the blessings and bounty one receives with a complex diagnosis.
