Y has been a genius in the kitchen lately and has been throwing together little delicious bites left and right. We've recently been branching out and finding new or forgotten food gems to incorporate into our dishes. After the soy allergy diagnosis, I realized just buying canned food (example, tuna) became more difficult as soy is added to nearly everything. Yes even most canned tuna.
Luckily, our exploring of Whole Foods Market has been amazing for finding simple, delicious food with no additives or fillers. We recently picked up goat cheese with no vegetable rennet (which is made from soy often), black olives packed in water instead of vegetable oil, and soft brown rice tortillas.
Y put together a great Italian Antipasti (appetizer) dish that had me raving. It was a simple yet sophisticated pairing that let each flavor shine and compliment the other tastes easily. We're definitely making these again for my birthday cocktail night.
Gluten Free Italian Antipasti
(No Soy, Gluten, Peanuts, Tree Nuts, Eggs, or Wheat. Contains Dairy).
- Food for Life Brown Rice Tortillas cut into about 2 inch squares, or gf cracker of choice.
- Small slice of Goat Cheese
- Roma tomato, sliced
- Kalamata Olives, halved. 1 to each antipasti
- 1 sprig of Fresh Dill to each antipasti
Pair with a homemade veggie juice, grape juice, or allergen free cocktail. I've been slowly reintroducing Red Wine back into my diet and this pairing was fabulous.
